Heather's Mom & Step Dad are in Alaska this week! We've been exploring!! Today we went to Seward, Alaska, and visited the Sealife Center! The animals are amazing!

Happy Mother's Day!

This marks my 3rd Mother's Day! What a wonderful one it was. James was at work for most of the day, but he surprised me with a big, beautiful hanging plant for outside, tulips, and a mani/pedi at the spa! Tomorrow, I have a Vichy massage scheduled & then he & the girls are taking me out to a nice steak dinner! mmm! I have a wonderful, beautiful life! It's been hitting me lately, as I'm seeing all of these different milestones the girls are going through, that life goes by SO FAST!

Quinoa Lettuce Wraps

I've been experimenting with different foods in search of new foods that tasted good and were healthier for our family. Here's my interpretation of a quinoa recipe I found online! It turned out fantastic! If you don't know what quinoa is, CLICK HERE.

Quinoa Lettuce Wraps

What you will need:

3/4 cup quinoa
1 can Chicken broth
1lb of ground beef (this recipe would be AMAZING without this! But James would kill me if it didn't contain meat haha)
1 can black beans, drained
1 can of corn, or frozen if you have it, drained
1/2 onion
diced red, orange, yellow peppers
minced garlic
salsa
sharp shredded cheese
dash of Frank's red hot or Cholula
olive oil
salt & pepper
Head of romaine lettuce

*****This is easily a whatever you have kind of recipe! Fill free to add different veggies.

Bring the chicken broth to a boil, add quinoa. Bring to boil again. Turn heat to LO, and cover with lid, cooking for 15mins or until most liquid is absorbed. Let sit for 5 mins.
Brown burger.
Heat olive oil in pan. Add diced onion & garlic. Let cook down and open up about 5 mins. Then add peppers. Cook for a few more minutes until soft. Add browned beef, drained, beans, corn, quinoa, S&P, and hot sauce. Stir. Remove from heat, let cool. It needs to be cooler, otherwise you can't handle the lettuce.
While it cools, wash and cut ends off of head of lettuce. Take it apart to create your little lettuce boats.
Once quinoa mixture is cool, scoop into lettuce boats. Top with salsa & a bit of sharp cheddar. ENJOY!!

These can be a bit messy if you will too much, but oh wow, they were good. Jaime even ate them! Peppers and all! If you didn't want to use the lettuce, it would be great by itself. You could just top with salsa, cheese and serve. It's extremely filling, and tons of protein too!!

Jaime is finally kicking the diaper habit..

So, I decided pretty much yesterday, Jaime was done with diapers. I've had to order them from Amazon for some time now, because she was wearing a size 7.. which they don't carry at stores. She has been peeing off and on in the potty for a few months now, but not consistently, and with a new baby coming, I didn't have the time nor energy to try to potty train her then. BUT now the diapers are hurting her legs & she blows through them in like 2 hrs..
She has been wearing panties for two days. We went to Costco last night, and I asked her to tell me if she had to pee, which she is pretty good about, but peed her pants anyway. Today, she peed her pants twice while outside playing. But while inside, she went right in to the bathroom and peed.. so I don't know what the difference is. I think maybe she is forgetting in all the playing outside excitement that she isn't wearing a diaper. My chiropractor actually gave me the idea to offer her a penny for pee & a quarter for poop, to put into her piggy bank, and what do you know, she POOPED today in the potty!
Before she did, she asked me where her diapers were. I told her the diaper fairy came and took her diapers and gave them to all the babies that needed them..

I know she's just beginning, but this is one GIANT step forward! I'n so proud of her!!

Hello to our family & friends! I've seen tons of family blogs, and thought that we should create one for us, since we live so far away from some of you! I, Heather, will probably do most of the posting, but I'm sure James will put in two sense occasionally! I'm not sure how often I will update, weekly, monthly, depends on whats going on!
I hope we can use this as a way to let everyone know what's going on with us, and with the girls! I will also post pictures & videos so you can see them grow!!
